Starting as a server and bartender, his horticultural degree and passion for outdoor work led him to transform our garden into a flourishing oasis of fresh produce.

“This year, our garden boasts a variety of lettuces, tomatoes, peppers, squash, brussels sprouts, and even rhubarb,” he says.
Each plant is a testament to David’s dedication and our commitment to providing you with the freshest ingredients possible.
For David, the most rewarding part of his role is seeing the fruits (and vegetables) of his labor served at our events. “It’s incredibly satisfying to grow something and then serve it to our guests, knowing they’re enjoying produce as fresh as it gets,” he shares.
This direct farm-to-table experience is not just about taste; it’s about creating a connection between our guests and the natural world.
Beyond vegetables, our garden includes an herb section rich with lemon verbena, mint, basil, rosemary, and chives. These aromatic herbs infuse our dishes with unparalleled flavor and are a staple in our kitchen’s repertoire.
Additionally, our fruit orchard, with its apple, cherry and pear trees, not only provides fresh fruit for our dishes but also supports the local wildlife, including our beloved deer.
Our commitment to sustainability extends to our apiary, where bees work diligently to produce honey used in various dishes and enjoyed by our guests. These industrious pollinators play a crucial role in maintaining the health of our garden, ensuring that our plants thrive and our harvests are plentiful.
Gardening has its challenges.
Weeds and pests are a constant battle, but David faces them with resilience and creativity. “If there are no bugs in your garden, are you even doing anything right?” he quips, highlighting the balance of managing a thriving organic garden. His methods, such as using coffee grounds to deter pests and organic sprays, ensure that our garden remains a sanctuary of natural, healthy produce.
